Skipping the night time feeding?

My 11 week old son usually goes to bed at 8 pm and sleeps until 230. I feed and lay him back down with no problem. About 21/2 to 3 hours later he is back up crying. I have tried the patting and sushing, the pacifier (usually holds him for 30 extra min at a time). The only thing that seems to get him back to sleep is a bottle, and I know he can obviously go longer in between feedings. Sometimes he will take a full bottle and other times he will only take a little. Any one else with a similar problem? Need some tips to try and skip this feeding or is he just being an infant and this stage to will p?
